HEALTHY FOOD RESTAUANT TO DEBUT NEW LOOK & LOCATION
The Pump Energy Food Freshens Up
For more than a decade, The Pump Energy Food has been delivering
healthy food to a fiercely loyal customer base, made up of celebrities, fashion designers, ad agencies,
investment bankers and law firms; people who lead very busy lives but care about what they eat. Pump
frequenters can expect a completely new aesthetic in the launch of their sixth location, at 275
Madison Avenue (at 40th St) in late May.
New CEO, Adam Eskin hopes this location will serve as a relief valve for his other five restaurants
clustered across midtown. “Our existing stores are way beyond capacity. The lines are out the door
nearly every day and they are so small we just couldn’t do anything to make them more efficient or
to cook more food.” The company is hoping the larger new location, sandwiched between its five
other midtown stores, will help meet the growing demand from its customers.
A longtime Pump fanatic himself, Eskin liked the food so much that he led an investment group to
buy the ten-year old mini-chain in late 2006. Long known as “A Physical Fitness Restaurant” with
pictures of bodybuilders and celebrities on the wall, he saw the opportunity to broaden its appeal to a
greater audience.
The old stores had grown tired and worn and typified the term “hole-in-the-wall”, so with this
location, he wanted to breathe some fresh air into the concept. To reinvigorate the brand, he hired
Dan Fogarty, a former Chipotle Mexican Grill branding executive, who helped create a new logo and
brand identity, a soon-to-debut website, and has helped Eskin create the new store design. “The
challenge was to refresh a brand without alienating customers from the very things that created their
loyalty in the first place. We tried to accomplish this by keeping an open dialogue with our customers
and basing the majority of our changes directly on their feedback,” says Eskin.
Originally, Eskin had hired a nationally recognized restaurant design firm to create a new look for the
store, but he felt their ideas were too generic, so he hired New York architect, Garrett Singer. Singer’s
former projects included Hill Country BBQ, Havana Central, Soho Park NYC, Klee Brassiere and
Avignone Chemists. “The Pump has been around New York City for a long time and I wanted the
look to reflect the city. The feel is kind of industrial, but also warm and inviting – like a SoHo loft
kitchen,” commented Eskin. “Garrett did a really nice job of bringing in a lot of cool design elements,
including some neat visual tricks tied to our past heritage of gym goers and bodybuilders.”
Along with the new look, Eskin has dramatically simplified The Pump’s elaborate menu, which had
ballooned to more than 150 items over the years. ”It was way too big and impossible to execute well.
It was so overwhelming, customers didn’t know what to order. So we’ve reduced it down to only our
best dishes and created a much more efficient kitchen design and ordering process. With lines out the
door everyday for years, our customers have learned to be very patient with us. Now we’ll be able to
get them in and out much faster. Our mission is ‘to make it easy for people to eat well’ and we’re
hoping this store will do just that,” says Eskin.
