Foodie Friday: Creamy Potato Veggie Soup

I really have a thing for soups, don’t I?

This week, I made kind of a “kitchen sink” soup, with whatever I had laying around.  I had a packet of instant butter and herb mashed potatoes and thought it would make a great soup.  The whole thing took me maybe 10 minutes max, and it really hit the spot.

First, I chopped up some kale, and carrots, and threw it in a pot with a little olive oil, some frozen okra, and a few red pepper flakes.  I didn’t use any other spices, except for a little pepper at the end, because the potatos were already flavored.  After the kale wilted, and the veggies softened, I added in 1 can (2 cups) of fat free chicken stock, and 2 cups of water.

After that came to a boil, I mixed in the potatoes and let them sit for a minute.

I like my soups kind of thick, but if you prefer it a little more runny, you’d want to add in about another cup of water.

I served it up and had it with 2 slices of whole wheat bread and a little Smart Balance.

It was delicious.  I’m definately going to make this again, but I think next time I might add some diced ham or crumbled bacon.

    The first time I read that I thought you meant that you had a packet of instant butter, rather than butter & herb mashed potatoes.. I wonder what instant butter would be like?

    Your soup sounds so good. And I LOVE red pepper flakes. I always sprinkle way too many on my egg whites and then I eat it in a sandwich and the spice just burns. But its so tasty.

    Also, what exactly IS okra?

    Oh wow, awesome pantry meal. I’ve been making a lot of these this week because I’m leaving for 5 days at Thanksgiving and I didn’t want to buy a lot of new, fresh stuff! Soup is SO good for using up bits of this and that.

    I made something similar on Sunday! I had leftover mashed potatoes so I first browned some onion & carrots in a little butter, added about 2.5 cups of skim milk, the mashed potatoes and frozen broccoli. It was so tasty!

    Soup is by far my favorite food, and yours looks great! I would have never thought to use instant mash in it to make it creamy!

    I love okra second only to lima beans in soup. I also hadn’t thought of using instant mashed potatoes– there goes my “too time consuming” excuse.
