Mmmmm, starch. Im a big fan of spuds. I prefer sweet potatoes (why have savory when you can have sweet? Plus, extra vitamins!), but last night I used a big russet to make some delicious oven baked french fries.
Super simple recipe:
- Preheat your oven to 400*
- Slice your tater in any shape you want (give stars a try)
- Spray a baking sheet with cooking spray, spread your fries out in a single layer
- Bake till golden brown on one side
- Flip
- Brown the other side (timing depends on how thick your slices are, but I’ve found that average baking time is around 30 minutes)
Season as you wish. I sprinkled mine with Johnny’s seasoning (heaven in a shaker) and a little cheddar cheese.
There’s no reason you can’t have french fries, but there’s no reason to have them with added fats and oils.
I could live on these things. I probably wouldn;t live for very long, but atleast I’d go out happy. ;)

Mmm. I prefer sweet potatoes too but rumor has it (and by rumor I mean I read it on another blog at some point) that russets are one of the veggies highest in antioxidants. Plus– and I’m not sure you’d agree– ketchup tastes weird on sweet potato fries.
I yam a total sucker for sweet potatoes!
(I actually prefer the yams.)
Sounds like a yummy recipe.
I made sweet potato fries last weekend – just cut them up, sprinkled some olive oil, salt and pepper, and baked them in the oven. MMMMM. I’m getting hungry thinking about it.
I absolutely LOVE making homemade fries!! YUM!! And I didn’t even think about adding cheese! Hello cheese fries for dinner!! :-)
I make those things all the time, using sweet potatoes. I like to sprinkle some cumin and black pepper on mine before popping them in the oven, but I’m thinking I need to experiment with other spices.
Cheese would be great!
I was always the “white” potatoe type of gal.
I had my first taste of sweet potatoes the other night. I was pleasantly surprise how good it was. Now that my taste buds have changed. I’m trying a new “foods” once a week.
Grams had mention baking or pan frying them. What a great idea. Will try this next.
I do this with sweet potatoes alll the time, but this looks so good with the cheese!
Yum. I too have done this with sweet potatoes, why I never thought to do with with regular russets is beyond me.
Also, I made the 3 ingredient soup this week. Holy soup lovin heaven! So easy and so good! I put ground turkey in mine, and it was A-MAZING! Thanks for the idea!
you guys never thought of cheese!? I look at these as just a vehicle to eat more cheese. :)
tfh- i always eat ketchup on my sweet potato fries, too! I can eat ketchup on anything. ketchup and cheese.
lori- ha. puns. i love it.
Maggie- how do you pan fry? like with oil? that Grammy is always good for ideas <3
AllisonK- im glad you liked it! its SO easy. try making a bunch of brown rice and adding it so its still all soupy, but thick. so good! with cheese of course!
I love it – “Why have savory when you can have sweet?” So true :) But your recipe looks yummy with regular ol’ potatoes too!
I loooove potatoes. Especially sweet, but any kind will do. I had potatoes at dinner tonight. I like how YOU slice em. I think I might have to try them your way soon. Especially with cheese.
