Foodie Friday: The Most Simple Soup Ever

A very sweet client of mine brought me lunch the other day: soup. I’m usually not a big fan of soup, no matter how bulked up it is with veggies or noodles or meats, because it still never fills me up.  This soup, however, did so I had to ask her what was in it.

Ingredient list?

Chicken Broth.

Fat free Refried Beans.

Salsa.

That’s it.

The recipe? Just as simple.

I decided to make it last night, and it did not disappoint.

I mixed everything in a saucepan and heated it through.

Meanwhile, I grilled some chicken on my handy, dandy George Foreman Lean Mean Fat Reducing Grilling Machine.

I shredded it, mixed it in with the soup, topped it with some cheese and viola! Spicy Mexican Chicken Soup. I toasted half of a whole wheat hamburger bun and had a very filling, nutritious meal.

The best thing about this recipe is how versitile it is. You can add beans, ground beef or turkey, veggies: whatever you want. Mix in some sour cream, or crumble some tortilla chips on top: the possibilities are endless.

I mixed some of the leftovers with some brown rice for lunch today, and honestly, I think its better this way.

I have seen similar recipes before, but have been afraid to try it! Now I know it is worth it. It looks delicious. Thanks for sharing!

    Three ingredient soup? Very cool!

  3. Judy says:

Oh, wow, that looks so yummy and so easy. I must try it.

I LOVE soups, but my husband … not so much. This sounds like one he might eat. I’m not a great cook but soups are so easy I can handle them. And we LOVE Mexican-style food!

Now I know what we’re having for dinner tonight – plus I can add some pureed tomatoes that I’ve had in the fridge for a few days. Thanks!

Your client and I would get along VERY well. This soup sounds fantastic – I love Foodie Friday, is it now an official segment? Way to cater to the food blogging MASSES, Kelly – very smart ;)

I wont say thats my SKILL LEVEL (as I loathe women who say things like “I burn toast. I cant boil an egg” *eyeroll*) but it for SURE is my interest level in timespentinkitchen.

    LOVE.

  7. I love easy recipes. You just a full can/jar of each and just go?

Hmmm…I bet refried black beans would be tasty, too.

  8. Kristie says:

I was insanely excited when I saw the ingredients for this soup. Mainly because I just opened up a can of refried beans yesterday and a good chunk of it is still left over in my fridge. Now I know exactly what is going to happen to those left overs.

  9. “lean mean fat reducing grilling machine”

this exact quote is said by Aiden in Sex and the city, and if you tell me that is where you got it from, I will love you even more then I do now, because that show is fantastical

  10. chandra says:

Really?! Just one can/jar of each, heat, and you have soup?! And so many different things you can add to it?! I just found a new favorite meal!

  11. belle says:

WOw, thats really new recipe but it sure does look good. Nevertheless, i shall give it a try myself! Thanks for sharing:)

  12. Kelly Turner says:

fbg- i used the whole cans of broth and beans, and then half of the jar of salsa (i should have mentioned that.) for thicker soup, use less broth.

modelbehavior- no, thats just the name of it, it says it on the front. Ive never seen a full episode of sex and the city 1) because i dont have cable and 2) SJP’s face and Kim Catrall’s cleavage freak me out.

  13. Ha it says it on the thing? that’s hilarious, I even have one and have never noticed

  14. amyp says:

Made it, ate it, really liked it. Added about 2 cups water, can of black beans, lots of cumin (I have a cumin addiction) and about 3-4 cups pureed San Marzano tomatoes.

Served w/ a bit of yogurt mixed in. Everyone loved it, had to tell 3-y-o picky eater that Dora called me with the recipe, then he loved it too :)

  15. Zandria says:

“Simple” and “good” and “filling” are the magic words here. I’m definitely going to make this!

  16. Colleen says:

Oooo, I bet if you added corn it would be good too! YUMMY! Thanks Kelly!

  17. ttfn300 says:

ooh, so easy and I have some refried beans… somewhere… when I find them i’ll give it a shot :)

  18. Natalie says:

What an awesome idea! I’m definitely trying it :)

  19. This looks so easy, delicious and healthy. Doesn’t get any better than that!

  20. Judy says:

I just finally got around to trying this tonight. YUMMY! I threw in a couple spoonfuls of Oikos Greek Yogurt, and then stirred some honey into the rest of the yogurt for dessert. I think this will become a staple around this house.

  21. Tin says:

Your right that is simple. I love refried beans as well. Thank you for participting in the second edition of the SFF Blog Carnival.
