If you like having an application dock like in Mac OS X, Awn is a great application. It stays on top of all Windows, allows you to add new applications to the dock on the fly, and adds open applications to the dock (very similar to OS X). Awn is available in the Ubuntu repositories, or you can download it from the project homepage. The included Youtube video does an excellent job demonstrating the various features of Awn.
