Problems Assigning Category Colors in Outlook

Why in the world can I not assign custom colors to categories? Perhaps more importantly why in the world can I not select the core primary and secondary colors? I know some of them are close but there’s not a YELLOW.
Why can’t I assign a completely solid color as well. All of these have these slight gradients.
Sorry, just had to rant for a little bit.
